Bacon-wrapped Shrimp

Bacon-wrapped shrimp

Threw it on top of some 4-cheese mac & cheese
Well, finally we're getting down to the essentials. Thursday was National Shrimp Day, and since it's one of my faves, I decided to make some. And then wrap it in bacon (which, as we all know, goes with everything). Threw it on top of some 4-cheese mac & cheese with bacon and prosciutto (leftover from a restaurant, and my new life goal is to figure out the recipe, will post here when it's discovered), and it was heavenly.

Ingredients:
  • 14 large, peeled, deveined, de-tailed shrimp (you can make more/less, but adjust number of bacon slices then)
  • ~ 4-5 pieces of bacon (I used turkey bacon - cut it in half in both directions to make enough for the 14 shrimp)
  • ~1 tablespoon of extra virgin olive oil
  • Salt & pepper
Directions:
  • Defrost shrimp. 
  • In bowl, mix olive oil & salt & pepper. Season the shrimp in bowl. (Aka throw them in and mush them around...the longer you let them marinate for, the better)
  • Wrap shrimp in bacon slices. (my turkey bacon was was long and thick so I divided it down the middle both ways)
  • Heat up your grill to medium heat. (or if you're frying them...then don't)
  • Place the shrimp-wrapped bacon onto the grill. Grill ~8 minutes, flipping from side to side, til shrimp is cooked and bacon is browned to how you like it.
  • Eat!
Prep: 15 minutes
Yield: With it thrown over pasta, 2 meals.
