Ingredients:
- 8 1/4-1/2-inch thick slices Italian bread
- 8 oz. mozzarella cheese
- 8 oz. pesto sauce (homemade or store-bought...I'm all about the store-bought)
- Extra virgin olive oil for brushing
- Salt & pepper to taste (optional, delicious with or without)
Directions:
- Preheat panini grill to medium-high heat.
- Brush one side of each bread slice with olive oil.
- Lay 4 slices oil-side down and spread the top of each slice with a thin layer of pesto. (If you put too much, it will seep through the bread.)
- Arrange mozzarella slices in a single layer on the 4 pesto'ed bread slices.
- Season with salt and pepper. (optional)
- Top each prepared slice with one of the remaining bread slice, oiled side up.
- Place 1-2 sandwiches on the preheated panini grill, close the lid, and cook until the bread is toasted and the cheese is melted (~3-4 minutes).
- Transfer sandwiches to a plate or cutting board and cut in half to serve.
- Repeat with the remaining sandwiches.
Prep: 10 minutes
Yield: 4 sandwiches
