Pesto and Mozzarella Panini


Ingredients:
  • 8 1/4-1/2-inch thick slices Italian bread 
  • 8 oz. mozzarella cheese
  • 8 oz. pesto sauce (homemade or store-bought...I'm all about the store-bought)
  • Extra virgin olive oil for brushing
  • Salt & pepper to taste (optional, delicious with or without)
Directions:

  • Preheat panini grill to medium-high heat.
  • Brush one side of each bread slice with olive oil.
  • Lay 4 slices oil-side down and spread the top of each slice with a thin layer of pesto. (If you put too much, it will seep through the bread.)
  • Arrange mozzarella slices in a single layer on the 4 pesto'ed bread slices.
  • Season with salt and pepper. (optional)
  • Top each prepared slice with one of the remaining bread slice, oiled side up.
  • Place 1-2 sandwiches on the preheated panini grill, close the lid, and cook until the bread is toasted and the cheese is melted (~3-4 minutes).
  • Transfer sandwiches to a plate or cutting board and cut in half to serve.
  • Repeat with the remaining sandwiches.
Prep: 10 minutes
Yield: 4 sandwiches


A staple of mine. I like to make a whole bunch of sandwiches at once and then reheat them for lunch for the next few days! Yum! Enjoy!
